The tone is set with appetizers such as minestrone soup with a twist that includes Creole vegetable tubers and pesto, crab cakes with citrus sauce, and a medallion of foie gras au naturel prepared in-house. The chef aims high! The beautiful menu of fish carpaccio served plain, Asian- or Tahitian-style, the veal stew with sweet turmeric or the “blaff” court-bouillon with Caribbean vegetables, remain the culinary jewels of this must-visit venue and we hope you will try them as soon as you can.
